
One of my favorite parts about sewing with knits is that they do not fray like woven fabrics. If you're in a rush, you could leave your hem as is! For a more professional look, Melanie suggests adding a simple zigzag stitch around the raw edges and then stitching a 1/4" hem.
Most stretch knit fabrics would work great for this circle skirt, like ponte de roma or cotton spandex knits. A few of my picks from the store:
